Proteins:
Processed soy-based product with a smooth texture that is high in protein.
• Ingredient in our pudding, “cheesecakes”, one of the “Protein of the Day” options,
and some of our special entrees.
2000 year-old traditional Indonesian fermented whole soy food which is very high in protein, has a flaky texture and is more flavorful than tofu.
• One of the “Protein of the Day” options
A foodstuff that resembles meat in taste and texture made from the gluten of wheat. Seitan is an alternative to soy-based meat substitutes such as tofu and is popular in Asian and macrobiotic cuisines.
• Main ingredient in our Gyros, and is one of the “Protein of the Day” options.
A high-protein meat substitute made by the continuous fermentation of the fungus Fusarium Gramineurum. The resulting sheet of fungal mycelia is mixed with free range egg white which acts as a binder. Mycoprotein is a source of protein, fiber, biotin, iron and zinc, and is low in saturated fat.
• Main ingredient in the “fake chicken” of our Portabella “Chicken” Sandwich.
A meatless sausage made from organic tofu, wheat gluten, textured wheat protein and spices.
• Used for our Chicago Polish.
Texturized Vegetable Protein also known as Textured Soy Protein (TSP) is a meat substitute made from defatted soy flour; a by-product of making soybean oil. It has a ground-beef-like texture, is quick to cook, high in proteinx and low in fat.
• Ingredient in our Southwestern Chili.

A natural sweetener made from the agave plant; consists of fructose and glucose.
• Available at our condiment counter, ingredient in some baked goods, optional in our Green Goodness fresh-pressed juice.
The building blocks of protein. Humans can naturally produce 10
of the 20 amino acids. The others, called essential amino acids, must be supplied by food. An amino acid deficiency results in the degradation of the body’s proteins, like muscles, skin and hair. In order to maintain optimal heath, all 10 essential amino acids must be present in a person’s daily diet.

Through the process of fermentation, a product becomes
preserved, develops a pleasantly sour taste, and gets to be rich in vitamins and
minerals. Fermented products prevent numerous illnesses.
• Used in the production of our soy sauce, tamari, tempeh, miso, sauerkraut and cheese.
Milled crystal salt mined from the Himalayan Mountains. This salt is hand-washed, sun-dried, unpolluted, unprocessed and contains 84 minerals including iron. This is one of the most nutritious salts available.
• Used in all dishes instead of conventional table salt.
A natural sweetener made from the sap of the maple tree. It contains calcium, potassium, sucrose, fructose, glucose, vitamins and minerals.
• An ingredient in some of our desserts and baked goods.
Wheat that has been allowed to germinate slightly. This process aids in digestion and helps reduce the overall presence of carbohydrates. Sprouted wheat is easier to digest and contains more nutrients than unsprouted wheat. Some people who are wheat sensitive or allergic to wheat can tolerate it in the sprouted form.
• Our toast is made of sprouted wheat.
Used as a natural sweetener, this plant (also called sweet leaf) is part of
the sunflower family. Stevia has negligible effect on blood glucose; therefore it is
attractive as a natural sweetener to diabetics and for carbohydrate-controlled diets.
• Available as individually wrapped sweetener packets at our condiments counter.
Egg-and-dairy-free sandwich spread akin to mayonnaise designed for vegan diets. The main ingredient in Veganaise is canola oil.
• Used on our Portabella “Chicken” Sandwich, and in some dips and sauces.
Definitions:
Food continuously tested and certified by independent
organizations such as USDA to not have had pesticides, fertilizers or other chemicals used in any part of cultivation. Certified Organic foods do not use GMOs (Genetically Modified Organisms).
• All of products we use except for the ones marked with a star * are certified organic.
Fair partnership between businesses and organizations in North America and producers in the developing world. Criteria include: fair wages in local context, environmental sustainability, financial and technical support and respecting cultural identity.
• All of our coffees and some of our teas are Fair Trade Certified.
A person whose diet excludes anything coming from an animal including eggs, dairy and honey.

Earl Grey is a British tea classic and is the most popular tea in the Western World. This citrus scented tea blend has a rich history dating back to the 19th Century Sino-British trade of opium, tea, silk and porcelain. Organic Earl Grey is a black tea blend harvested from antique tea trees infused with natural Bergamot citrus.

Ingredients: Organic Fair Trade Certified™ black tea and natural essential bergamot oil.
Jade Cloud is a special grade of Chinese green tea produced in the higher elevation tea gardens and carefully selected from the farmer’s earliest batches of spring tea. Organic Jade Cloud has a mellow and refreshing character that’s smooth with low astringency.
Infusion Time: 3–4 minutes

Yerba Maté is an indigenous herb of the Amazon with invigorating energy and robust flavor. It is rich in vitamins, minerals and antioxidants. Our Yerba Maté is sustainable and shade-grown. Yerba Maté contains caffeine and delivers uplifting energy.
Infusion Time: 5–6 minutes
Ingredients: Organic shade grown yerba maté.
Chamomile blossoms have a mildly sweet and fruity flavor with a floral and soothing aroma. An infusion of Chamomile is noted for its naturally calming energy and is one of the most popular caffeine free herbal teas.

Ingredients: Organic chamomile flowers.
The U.S. Pacific Northwest variety of Peppermint is the most aromatic and potent form of this world-renowned mint variety. Its flavor and heady aroma is distinctive and calming. Peppermint is soothing to the digestive system and according to the ancients, promotes focus and clear thinking. It is said that mint also cures a hangover.
Infusion Time: 4–5 minutes
Ingredients: Organic peppermint leaves.
Organic Hibiscus is wonderfully tart and fruity with notes of citrus and pomegranate. Hibiscus is known to have high vitamin C content and other beneficial health properties. Try adding a bit of honey, Agave Syrup or brown sugar to your hibiscus infusion to balance the tartness and bring out the fruity sweet potential.
